1. Kombucha is a lightly carbonated fermented tea. I like to call it a hippie health food drink. there are a lot of health claims for kombucha. I don't know if any are true but I like the drink. kombucha is very refreshing for me. I like the light & refreshing flavor sweet yet tart. It drinks more like a beer or cider than a soft drink, yet it has very, very low alcohol content.

      For me Kombucha has replaced soda, I much prefer kombucha. Fact: soda is bad for you. Even if all the kombucha health claims are false, simply by eliminating the soda makes it good for you.

      I make my kombucha with the best quality bulk loose leaf teas. Darjeeling, & English breakfast for black tea, Gunpowder, & Sencha for green tea, hibiscus flowers for color & flavor. Depending on the recipe the teas are steeped in sweetened water. Then fermented for 8 days with a SCOBY mother. After the fermentation process I keg to carbonate, before bottling. This is a 2 week process.

      A kombucha culture is a symbiotic culture of bacteria and yeast (SCOBY), containing Acetobacter (a genus of acetic acid bacteria) and one or more yeasts, which form a zoogleal mat.

      Although the bacterial component of a kombucha culture comprises several species, it almost always includes Gluconacetobacter xylinus (formerly Acetobacter xylinum), which ferments the alcohol(s) produced by the yeast(s) into acetic acid, increasing the acidity while limiting the kombucha's alcoholic content.

So to start, Kombucha has even made the tea healthier.

However, many believe that the real kicker is gluconic acid, a powerful detoxifier and chelator that has been shown to bind to heavy metals, convert into glucuronic acid and remove them from the body. With home-brewing, much more control over the flavor of the KT is possible. Those who prefer it on the sweeter side will have a shorter brewing cycle than those who prefer it on the sour side.
